The Hotel Molino de Alcuneza is a four-star rural establishment located in the area of Siguenza.This is a town of undoubted attraction for any restless traveller.

It was a water mill half a millennium ago and is now a Michelin Star and four-star hotel.

It has been lovingly restored by the family Ruizborn in Sigüenza with a deep connection to the history of the place and a strong commitment to heritage conservation.

The helm is in the hands of Samnuel and Blanca. Samuel at the cooker and in the bread oven and Blanca in the management of the hotel and in taking care of all the details.

The restoration of the mill was not only an architectural project, but also a labour of love and dedication to preserve the essence of the building while integrating modern standards of comfort.

They make their own bread, with centuries-old flour, and call themselves ‘guardians of the territory’, as they work with local suppliers, who provide them with honey, oil, wine, truffles, spelt flour, etc., and because they have a permanent obsession with preserving the environment and applying sustainability in everything they do.

For this reason, they have a Estrella Michelin Verde and a Sol Repsol sustainable, among other awards and seals of approval to date.

Their breakfast is one of their great emblems, awarded Best Breakfast in Spain, and they offer a bread workshop where you leave with a clear idea of how to make good, healthy, homemade sourdough bread.

On clear nights you can observe a clear and luminous sky and during the day you can get a close-up view of the Parque Natural del Río Dulce and to see the birds that our beloved Félix Rodríguez de la Fuente.
