The truffle: a treasure hidden underground

Imagine walking through holm oak fields, surrounded by breathtaking scenery, while accompanying trained truffle dogs on a search for underground treasure: la trufa negraa delicacy with an unmistakable aroma.

Truffle harvesting in la Alcarria is a tradition that goes back centuries. During the winter months, especially November to March, the region's holm oak groves are the perfect setting for harvesting the black truffle (Tuber melanosporum), an underground fungus with an intense aroma and flavour that is symbiotically associated with the roots of these trees.

Today, truffle growing in the Alcarria is not only an agricultural activity, but also a tourist attraction that allows visitors to immerse themselves in the process of searching for and harvesting this delicacy.

In cooperation with the company Trufa Cerolocated in Cifuentes, we will go out into the countryside to look for truffles, together with trained trailing dogsin an exciting activity where participants can dig in the ground and discover ripe truffles, while learning about the cultivation and properties of this fungus. The day also includes a tasting of various truffled products.

Not only will you witness an ancient process, but you will also contribute to the sustainable development of the regionsupporting local producers in their fight against depopulation.
